VITICULTURE
The fruit was hand-picked at 10.5 Baumé.
WINE MAKING
Cold pressed, free run juice was fermented in stainless steel tanks, with lees stirring three times a week. The wine was then aged on its lees for seven months. Finally, the Charmat method was used to conduct secondary fermentation.
TASTING NOTES
We’ve produced a dry style of Prosecco, which is both delicate and textural. There is crisp & lively green apple and citrus notes on the nose. The palate explodes with citrus fruit and is then followed by a long line of zingy, citrussy acidity that carries the flavours along onto the finish. This is a perfectly delicate and elegant aperitif.

Vintage 2018
“Charming and fragrant, the inviting bouquet shows rockmelon, mandarin, lemon zest and floral characters, followed by a succulent palate that is supple and smooth. It is comforting and very likeable with plenty of tasty flavours.” Sam Kim, Wine Orbit
“..has freshness and vinosity on the bouquet, and it’s clean and crisp on the palate with a hint of sweetness. On the right track style-wise..” – Halliday Wine Companion 2020
“Very pale straw nearly clear, with a small persistent bead. Green apple and citrus aromas along with hints of pear add to the complex but delicate nose. Active citrus fruit fills the palate along with tight refreshing acid, all well balanced and leading to a clean finish…” Stephen Read, Wine Matrix
Vintage 2017
“It is instantly appealing on the nose showing green rockmelon, pineapple, orange peel and floral characters. The palate is lively and refreshing with zesty acidity and juicy fruit intensity, offering terrific drinking. It is light on its feet and delightfully charming.” Sam Kim, Wine Orbit
Vintage 2015
“An exceptionally dry and crisp version of Prosecco from the cool climate of Tumbarumba. Delicious green apple characters come through on what is a delicate but mouth filling palate. Maybe the Processo Road will wind its way to Tumbarumba.” Ben Malouf
“A delightful sparkling wine, the fragrant bouquet shows white stone fruit, lemon peel, apple and floral characters. The palate is juicy and lively, delivering bright fruit intensity and smooth texture, beautifully supported by refreshing acidity. As you would expect from a good Prosecco, this offers fabulous drinkability.” Sam Kim, Wine Orbit
